Shahi tukda is a Mughlai dessert made with ghee fried bread, thickened sweetened milk, saffron, and nuts. Shahi is a Persian word meaning Royal and tukda or tukra.

- Firstly, in a Kadhai add ½ litre of milk and heat it up as soon as it’s hot.
- stir occasionally and get the milk to boil.
- Meanwhile, in a bowl take 2 tbsp of custard powder. i have used vanilla flavor custard powder. and add 3-4 tbsp of milk and mix well.
- once the milk has boiled, keep the flame on low and pour the prepared custard mixture into it.
- stir continuously, making sure there are no lumps formed in it.
- Then add Saffron to milk.
- also add Dry fruits and sugar. adjust the amount of sugar if looking for more sweeter fruit custard.
- mix continuously, keeping the flame on low.
- Then add Eliachi on it.
- the milk changes colour to dark yellow.
- furthermore, it thickens slightly. adjust the consistency by cooking for a long time.
- transfer to a small bowl and cool completely.
- firstly, cut the sides of the bread and cut them into triangles.
- fry the bread slices in hot ghee till the bread turns golden brown.
- fry the bread both the sides till they turn golden brown.
- furthermore, on a plate, place in fried bread slices, and pour in ½ cup of prepared custard.
- finally, garnish with a few chopped nuts and fruits and serve shahi tukda.
