Dahi vada is a type of chaat originating from the Indian subcontinent and popular throughout South Asia. It is prepared by soaking vadas in thick dahi.

  1. firstly, soak 1 cup of urad dal for 5 hours or overnight.
  2. drain off the water and transfer to the mixi or grinder. Blend to smooth paste adding water as required, and try to add a minimal amount of water to prevent the batter from turning watery.
  3. transfer the urad dal batter to a large bowl.
  4. now add 1 tsp salt, 1tsp kali mirch, pinch of hing, and mix well using the whisk.
  5. Then add 1 finely chopped chili and 1-inch grated ginger mix well using the whisk.
  6. prepare a thick batter. (If the batter is runny then add a tbsp of rice flour).
  7. Tips : To check the consistency of the batter, take a bowl of water, using a hand take 1 or 2 drops of batter and put it in a bowl of water.
  8. If the drops come at the level of the surface of the water, then the batter is fine.
  9. now with a wet spoon or using a hand, drop a spoonful of batter into the hot oil.
  10. keeping the flame on medium-high, stir occasionally
  11. fry until the Vada turns golden brown and crisp.
  12. drain off the vada over kitchen paper to remove excess oil.
  13. now in a large bowl take a cup of hot water. add ½ tsp salt
  14. now drop the hot fried vada into the water and dip completely.
  15. soak for 30 minutes, or until the vada absorbs water.
    after 30 minutes, squeeze off the water and transfer to the plate.
  16. how to prepare sweetened curd for dahi vada recipe :

  17. firstly, take 2 cups curd, 2 tbsp sugar, and ½ tsp salt.
  18. whisk and mix well making sure everything is well combined.
  19. how to assemble dahi bhalla for serving:

  20. firstly, pour the sweetened curd over the vada.
  21. also pour a generous amount of tamarind chutney.
  22. sprinkle chili powder, cumin powder, black salt, and chaat masala.
  23. top with coriander, anar and sev.
  24. finally, enjoy dahi vada or dahi bhalla chilled !!!!
